Watermelon Mocktail with Ginger and Mint

This is the most perfect drink for a hot summer’s day! It’s so refreshing and healthy! I like to make this for my family, and we have it out in our screened porch on particularly hot days. It just really tastes like summer. The best part about this drink is that it is incredibly easy & fast to make! It only takes about 5 minutes to put it all together.

Recipe Ingredients*

  • seedless watermelon

  • ginger-ale

  • fresh mint

*I didn’t put exact measurements, because the recipe is easily modified by preference of how much watermelon juice/ginger-ale you would like, or by how big of a batch you would like to make. Feel free to play around with the ratios! Instructions Fill blender with seedless watermelon chunks and blend until it becomes liquid. (About 1/4 of a melon without the rind serves 4). If you think that the juice is too pulpy, then you can pour it through a strainer to fix that issue. Wash the mint, and take it off the stem. Pour a tiny bit of the watermelon juice into the glass with as much mint as you would like and muddle (smush gently) the mint until it is soft. If you don’t own a muddler, a wooden spoon will also do the trick. Then, fill the glass with ice, and pour in the blended watermelon until the glass is halfway full. Pour in ginger-ale until the glass is full. Stir and enjoy!
